Fit Foods: Paleo Lunch – Chicken Salad

Salad! I love the stuff, but fully understand the reluctancy of others to throw one together. For me, the best way to get this rabbit chow to taste right is to ensure there’s some good protein in it (chicken in this case) and a very healthy does of fat (marcona almonds, pecans and olive oil shown above). Below are a few selections of my favorite salad components, any of which you can combine with one another to make a tasty meal:

Shrubs
Spinach (hearty and super cheap)
Romaine Lettuce (simple and crisp)
Butter Lettuce (mmmm, butter)
Swiss Chard (stems are good too!)
Radicchio (looks neat, tastes… neater?)
Endive
Arugula (a good substitute for spinach)

Proteins
Chicken (grilled ahead of time is the way to go here)
Steak (flank is my favorite)
Fish (think that tuna in a can is just for sammies?)
Pig (slices of tenderloin, vaaarr nice!)

Fats
Olive Oil (buy cold pressed, ask me why)
Avocado
Macadamia Nuts
Almonds (roast ‘em, it’s the only way to eat an almond)

Do you have an awesome salad recipe? Share it! Leave a comment below with your favorite way to make the green stuff good.
